– 2 cups sweet rice flour (also known as glutinous rice flour)

– 1 1/2 cups granulated sugar

– 1/2 teaspoon baking powder

– 1/4 teaspoon salt

– 1 can (13.5 ounces) coconut milk

– 1 1/2 cups water

– 1 teaspoon vanilla extract

– 1/2 cup unsalted butter, melted

– 2 large eggs, beaten

– Sesame seeds for topping (optional)




1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.


2. In a large mixing bowl, whisk together sweet rice flour, sugar, baking powder, and salt.


3. In a separate bowl, combine coconut milk, water, vanilla extract, melted butter, and beaten eggs.


4. Gradually add the wet ingredients to the dry ingredients, stirring well to combine. Make sure there are no lumps in the batter.


5. Pour the batter into the greased baking dish.


6. Bake in the preheated oven for about 50-60 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.


7. Allow the mochi cake to cool completely before cutting it into squares.


8. Optionally, you can sprinkle sesame seeds on top for added flavor and texture.


9. Once cooled, cut into squares and serve. The texture should be chewy and delicious.
